When any artisan makes the transition from mere mortal to bold-face name, informed patrons relish the ability to tell those with newly piqued interest that they’ve known about said artist, designer, musician, actor, insert-your-practice-here for years. For food-arts fans, the possibility of discovering emerging star chefs rises when one regularly dines in the formal dining rooms of cooking schools, none of which are more famous than the Culinary Institute of America. Of course, the school’s well known graduates—Grant Achatz, Sara Moulton, and Roy Yamaguchi among them—all serve flawless food in artfully appointed restaurants, well considered by some of the design world’s greatest talents. Now, CIA brings a similarly an informed design sensibility to its own four dining rooms by appointing Adam Tihany to the role of art director. As principal of Tihany Design, the designer is responsible for more than 300 restaurants, including New York’s Jean George, Le Circe 2000, Per Se, and Daniel. At CIA, he will advise on the school’s aesthetic choices during capital projects and renovations, and slowly shape the image of the Hyde Park, New York, campus.
